Sausage Rolls made with fresh Welsh pork and produce from Daniel Morris Butchers.
Ingredients
● 500g Puff Pastry
● 1 Small Onion, finely chopped
● 1 Carrot, grated
● 1 Small Red Pepper, finely chopped
● 50g Fresh Breadcrumbs
● 1 tsp Tomato Ketchup
● 1 tsp Dried Mixed Herbs
● 1 Egg, beaten
● Flour for rolling pastry

Method
1. Preheat oven to 220 C / 200 C fan / Gas 6.
2. Add the Sausage meat, Onion, Carrot, Red Pepper, Breadcrumbs, Herbs and Ketchup to a large mixing bowl.
3. Use a fork to mix all the ingredients together.
4. Roll out the pastry into a long rectangle (approx 40cm x 22cm).
5. Divide the sausage mixture into 2 and use to make 2 long sausage shapes, placing the mixture on each side of the pastry leaving enough pastry to fold over into the centre. Brush the middle with some of the beaten egg.
6. Fold the pastry tightly over each sausage shape and press down well to seal the pastry. Use a knife to cut through the middle making two long sausage rolls then cut each into 10 – 12 pieces.
7. Place on a baking tray, brush again with the remaining beaten egg and cook in the oven for around 20 minutes until golden brown.
