Our Favourite Welsh Lamb Cuts and How to Cook Them

🥩 Lamb Leg Joint

Perfect for: Sunday roasts and family gatherings
 The classic lamb leg joint is unbeatable when roasted to perfection. Season simply with garlic, rosemary, and olive oil for a traditional flavour, or try a Moroccan-style rub with spices and citrus. Roast slowly for tender meat that carves beautifully and serves a crowd.

Cooking tip: For a medium roast, cook at 180°C for 25 minutes per 500g, plus an extra 25 minutes. Rest for at least 15 minutes before carving.

🍖 Lamb Shoulder

Perfect for: Slow cooking, shredding, and sharing
 The lamb shoulder is rich and full of flavour, making it ideal for slow roasting. Cook it low and slow for a “pull-apart” texture – perfect for serving with flatbreads, fresh salads, or as part of a Mediterranean feast.

Cooking tip: Rub with herbs, garlic, and lemon, then roast at a lower temperature (160°C) for 4–5 hours until meltingly tender.

🍴 Lamb Chops & Cutlets

 Juicy, succulent, and quick to cook, lamb chops are a customer favourite. Grill or pan-fry with a sprinkle of sea salt and fresh herbs for a meal that’s ready in minutes. Pair with buttery mash or a crisp seasonal salad.

Cooking tip: Cook over high heat for 3–4 minutes on each side for medium doneness. Rest for 5 minutes before serving.
